If I were you, i will put it back in the tank and monitor it.
I will also do a test of the water parameter to determine if there is any thing wrong with the water. The fish could be trying to escape "poor" water condition.
Since they are accomplished leaper, get a cover of any kind for the tank as soon as possible.

Don't put it directly back into the tank if it still has dirt etc attached to the mucus coat. Try to wash or rinse off the dirt etc off the fish, then place it in a container with the tank water to let it re-acclimate itself, or place it back in the tank slowly. It is important to see that it is still respirating and the fins are moving. Snakeheads will jump, whether the water conditions are bad or good. Although they are strong, occasionally the height from which they drop from can more or less kill them from shock or injury, especially if they landed on the hard floor.

It's very hard for the fish to recover after falling from a height and be out of the water for a while. Firstly, its internal and external injures will be hard to heal. Second, while they are so sick, they will not eat. The best course of action is to get another fish.

In that case it was not out of the water for long. If it's eating then your snakehead is fine. I would suggest that you keep an eye on it for any signs of injury or stress, and do something about securing your tank cover.

You are lucky that it eats. It means that its injuries are not serious.
It may have a good chance of a full recovery if it continues to eat for a few days, provided the wounds don't deteriorate.
