    I'm looking for a foreground plant that may give a darker green as per the 2nd photo below. Can anyone suggest? Cos the paler green type not so nice

    That depend on the camera white balance. It can also depend on water condition and light.

    I seen Monte Carlo all being pretty paler green, so it's possible to get them darker green with the right conditions?

    You could try Marsilea Hirsuta, the mature submersed leaves are usually darker green in color.
