If you are referring to marimo balls, those themselves will not change water parameters (other than taking up some nutrients like most plants)... but they do absorb water and trap alot of dirt (kinda like sponges) so can bring stuff from their previous tank water over to the new tank (if not cleaned properly before introducing into a tank).
I've seen friends keep marimo balls in brackish tanks and in high pH sulawesi shrimp tanks too, so if you happen to get those that were from those type of tanks, they may carry over certain contents or maybe even bits of buffers/additives which may affect the water parameters in the next tank (the effect would depend on the relative volume of the tank though).

And the nitrates they take in is almost negligible as they are really really slow growers.
One thing to note is they will trap alot of dirt.
Do give take them out and give them a few gentle squeezes to clean them.
