Are there other types of foreground plants that will carpet beside moss ??? As I'll be tying moss to my driftwood. Any recommendation ?
Assuming you will plant them in soil then it would be the following:
1)Pygmy chain sword (Echinodorus tenellus)
2)Dwarf Hairgrass (Elocharis acicularis)
3)Dwarf Sagittaria (Sagittaria Subulata)
4)Marsilea hirsuta
These work great on low tech setups and i have personally grown them in my setups. 1 and 4 is my personal favorite.

Can also try glosso, its a suitable carpet plant for low tech tanks (though growth would naturally tend to be slow in low tech setups).
They do grow better if planted in nutrient rich substrate though, compared to just tied to mesh.

Yeah, generally carpet plants would tend to grow taller and more leggy if there is less light/less Co2, compared to shorter and more compact under stronger lights/more Co2.
What most people do is regularly trim their glosso carpet to keep it low, it also helps to prevent the new leaves underneath from being overshadowed too.

Oh I see. I'm trying to breed crystal red shrimp in my tank, so mini pellia or mini fissiden would be a good carpet for my tank ?? I do not have a chiller but I have a fan running 24/7. And which LFS sell mini fissiden and mini pellia ?

Those mosses are suitable for shrimp tanks, running a fan would help to reduce temperatures though you'll have to contend with topping up water regularly due to the much higher evaporation rates.
You can get mini pellia and mini fissidens from LFS like C328 or Seaview (usually tied on rocks or coconut shells and packaged in plastic cups), though getting them directly in loose form from other hobbyists usually yields more quantity at lower costs.
