Interesting. Can see the UG seems to come alive after day 5. Looking forward to see it spreading.
Looks good... i always like simple aquascape layouts.
Btw, you could probably reduce the soil height by half or more, since the UG naturally have shallow roots. A lower soil height will also allow for more water volume and make the tank look much larger (especially if you slope it from front to back).
Both of those plant could work well in your tank.... though pennywort plants tend to grow runners around and might tangle with the UG, so you'll probably need to trim them regularly to control where they grow. Downoi would be easier to control as they grow mostly in the same spot they were planted.

Thanks for you advice. I'll keep it simple with UG only for now.
I also noticed my rocks starting to have spots of diatoms on them. My guess is it likely due to high ammonia (@ 8mg/ltr) and nitrite due to Amazonia soil not fully cycled yet. I'll put in Seachem Purigen into my filter this weekend and see how....

May i know is this setup in an air conditioned room? or it is just normal room temperature in Singapore?
