as with other posts in this forum, we require your current setup to be posted to comprehend or provide some advice. If not, we are also stabbing in the dark when it comes to what advice to give.
Anyway, when growing HC, lots of people find it a demanding plant. Some small numbers of forumers here find it relatively easy but they are the more experience ones.
But I believe, the main culprit of your HC growing as it is, is due to not enough CO2 or in others you might not provide unlimited supply of CO2. Unlimited supply does not mean overdosing of CO2 which could potentially kill your fish/shrimp - just excess enough before your fauna feels the effect of an overdose. For me, I based on 1° pH drop, example before CO2 injection in the morning my pH is 6.8 so I target my pH gradually towards 5.8. The keyword is gradually. For me it's 6hrs based on my tank volume and amount of fish I have. I start injection 1 hrs before lights.
The lack of light, to a certain extent, will not cause HC to grow the way it did like in your tank. Too much light have the same effect as too much fert dosing, algae. I found this out when I did a year's worth of experiment on my tank, that light is important but not THE main limiting factor when it comes to aquatic planth growth or algae bloom. CO2 is....provide unlimiting supply yet not overdosing, will see good plant growth. Of course, with a good regiment of nutrient dosing and such.
