Ya can try using mosses such as java moss to start off with. As they're pretty adaptable to both emmersed and submerged environments, all ya need practically is to loosely have them spread all over moistened grounds and in a week, ya'll see new development growths on it.
Don't be alarmed when ya see it turning 2-3 shades darker than its original colour as it's going through a transition period from submerged to emmersed form. Little lime green fronds will appear from the old ones and with time and constant humidity, they'll form a carpet pretty soon.
As for grasses, ya need to have a proper ventilation for them. Also some species aren't adaptable to high humidity levels in the vivarium. What ya can try is to either have a ventilator ( a small fan or bigger opening with mesh ontop of the tank ) or to grow them from seeds as then ya'll be slowly inducing the seedlings to grow to your tank conditions. It's much better the latter way as they'll be more sturdier and able to flex within your given settings in your vivarium enclosure.
Also, for grasses, high light is an issue as most of them are pretty demanding. A strong wattage output will solve this problem but ya've to work out on the heat emittance side. As the higher the wattage, the more heat it produces, so make sure your tank enclosure doesn't become a sauna for your fauna and flora.
