Since betta and gouramis are both anabantoids, wouldn't the two male fight?
Depends on what is meant by "fight". Territorial disputes between anabantoids are common, they are not very tolerant of other fishes that encroach on their territory. These normally don't cause any major injuries.
Some species are especially aggressive towards conspecifics or those that look similar. Some are aggressive enough to cause major injuries that could lead to death.
I have read of accounts that B. splendens are extremely aggressive to the extent of killing other anabantoids. However, I also believe that environmental factors play a huge part too.
Keeping them in a small tank would provide more opportunities for such encounters. Therefore, providing lots of hiding places and a larger tank would generally minimise such issues.
Once you are able to provide this, the rest would then depend on the characters of the individual fishes.
