Any type of moss is good for shrimps. Just have to ensure that your water parameters are good enough for both the moss and its occupants.

I like to keep needle leaf java fern with my shrimp....looks good i reckon

Any but I noticed that when I had some peacock moss on driftwood, they would spend most of there time there. It seems that they love dirftwood more than the plants.

most mosses are good. My CRS seem to enjoy Taiwan moss, Fissiden Fontanus and "Mini Pellia" a lot.

I agree mostly with what has been said.
Any types of moss is good, and plants like Mocrosorums, and any ferns are good. I have found that they really love getting inside Lomariopsis/Subwassertang. Al of these can be grown without Co2 which helps if you have expensive CRS.
Marimo balls and UG are also good.
