I spread the gravel out on a few sheets of newspaper, on the floor in an airy area or where the sun will shine on it (balcony) and let it dry over a few days. Usually I rake it with my fingers each night to expose the wetter gravel below.
If you sleep in aircon room, put the gravel in the room with you... the drier air should help.
However, I still like to have the gravel bake under the sun for a few hours before storing it.
