actually it would make more sense that your gar attacked your koi.
in any case, i would not recommend u keeping your kois with gars, as my friend's gar ate 3 peacock bass and grew from 7" to 26" in 3months (idk how:S)

Moved on from plants to predatory fishes, but still finding for inspiration for a 3ft planted tank.

Gar with koi seems like a bad idea. For most part, gars are placid slow moving fish that prefer to ambush prey rather than chase them down. The kois however, are more active and will spend a lot of time looking for food at the water surface, which is where the gar usually hangs out. If you have to, put some floating plants in your pond, so the gar can hide among the roots. That way, it won't get spooked by your koi so easily and decide to jump. I figure your previous gar either died of some other reasons and the fishes in the pond ate the carcass, or it jumped out, and got lost somewhere in your house/compound. Or, it could have been eaten by a bird, if you live on landed property with an uncovered pond.
I have no idea what catfish you keep in the pond though.

no plants are save from the killer koi, maybe can try big plants like waterlily ?
Water hyacinth might be the best option if you want floating plants that will withstand your koi.
