Anyone kept the above 2 together and find that the shrimps eat the Monte Carlo? Seems to be happening for me, with my Monte Carlo carpet unable to develop even after a long time.

Possible... if the monte carlo are melting or not doing so well, and the shrimps are hungry, they will eat up the deteriorating parts. If the monte carlo are healthy and growing fast, those wouldn't get eaten.

Do you have Co2 injection in your tank to boost the plant growth?

I have kept Monte Carlo with colour shrimps. No problems with shrimps eating the plants. Colour shrimps are similar to Malayan shrimps but slightly bigger.
