Yup these shrimps are poop machines. Good for plants though
Pooping is good! Maybe you can consider adding some plants if you dont have them.
Watch water conditions if youre lazy to remove, shrimps arent hardy type

Should i suction these poop out? Are these considered at "ok" levels?
Any ideas what these mini bubbles on the leaves are??
They consist of many super small bubbles..
I have some snail eggs which are much bigger than these and have transferred them into another tank..
Plants pearling? Not too sure. As for the poos, i cant advise, never rear shrimps before, only crays

Do you have much flow in the tank? Could be just airbubbles which were trapped.
I guess one of the reasons you find the shrimp poo more noticeable could be because of the ratio of your tank volume vs number of shrimps... i noticed in your other thread you put 10+ shrimps in the 2.5 litre tank, hence a higher bio-load than usual, as most people would just put 3-4.
Btw, snails also tend to poo alot too.
Most of the time if a tank is planted and is already fully cycled, the waste material is usually left in the soil to be converted by the good bacteria into nutrients for the plants, but due to your small tank volume and relatively higher bio-load (and its still cycling), it would be a good idea to manually remove the waste material to prevent too much ammonia build up and help maintain the water quality.
Hornwort leaves, especially the newer ones, tend to have bubbles trapped within in order to make it float. Its normal.
The bubbles are actually inside the thin forked leaves right?
I have only 7 shrimps in my 5 L tank n they seems over crowded already ! U have 16 !
