It's Cyperus Haspan or Dwarf Papyrus Sedge.
Hi guys, anyone know what plant is this? It suddenly grew a very long stem / leave towards the water surface.

It's Cyperus Haspan or Dwarf Papyrus Sedge.
Yeah, Cyperus haspan is a pond/marginal plant. It typically grows mostly emersed with only its bottom under shallow water. It will not grow the crown underwater (what you see currently is actually the emersed part). It will typically grow a long stem until above the surface, then grow a new crown above the water.
This is what it will look like as it grows out of the water surface (make sure there is enough space above the tank for it to do so):
