They will leave healthy plants alone.
Ok I'm curious I know they eat algae but do they eat and destroy plants too? Cause I bought one plant then next day I came home from work the plant was cut in half the leaves well there were few left well I currently got 3 cherry shrimp n I am totally new in looking after cherry shrimps so I'm wondering...

Marimo will lose its ball shape if you do not turn it often. Do you have some form of CO2 and light period in the tank? If not, the plants will just die off and the shrimp will feed on them.

with 3 shrimps, i doubt they be able to devour that amount of plant matter you described....too many times their physical size![]()
cherry shrimps will not eat healthy plants.
they only consume the decaying material or soft tissue.

you can always get low requirement plants, like java ferns and mosses. if you keep buying plants that are not low requirement, they will just end up rotting and polluting the tank water if not eaten by the shrimps.
then you spend on the plants, frequent water changes and more effort to keep buying and planting the plants..

You may want to try out brazillian microsword. They can grow in low tech condition but its hard to get them to grow compact as in lawn effect without proper and sufficient light, co2, fertilizer regime.
