will out planting and replanting stress our fish each time we decide to be itchy fingers and put our hands into the water?

Once in a while should be fine...they get use to it. Just remember to do a large water change after you uproot or move things around in the tank or else you might end up with an algae bloom or worst dead critters.

Its ammonia "city" down there. Great for trigging algae and killing critters. As long as you kick up the mulm pretty good, do a large water change. Its up to you though. Fancy a big algae bloom? Don't do the water change then.

Note: You would also get a heavy reduction in O2 levels if you leave the NH3/NH4 to the bacteria. They need O2 to work on the NH3/NH4 conversion.
