From what I read.. iodine is essential for the shrimp moulting process, without which shrimps will turn white and die from moulting complications. I've seen this happen to some of my bee shrimp, but i'm not sure of the cause. I came upon iodine deficiency while checking out possible cause of deaths. Suggest supplementation via iodine supplements, I think i've seen Red Sea and Seachem branded iodine supplements. Dunno if it's suitable for freshwater though, it says the ingredients are sodium iodide... will increase salinity?
Calcium's importance is obvious towards their carapace.
