I have replanted hair grass stored in the fridge for 3 weeks. They looked yellowish when I planted but most recovered and grew. I had put them in a plastic bag without water. Just moist environment.
For your Crypts, I have no experience keeping them that long. Maybe keep some in a pail of fish tank water under balcony light source and some in the fridge. And let us know how it goes.

I've left mine floating in a pail of water in indirect light, no direct sunlinght as it heats up small bodies of water too much. Kept it there for almost 2 months, C retrospiralis, balansae. No problem. They melt a bit when planted.
