What fish? Could be chase, catching flying insect, water parameters ..... .
God will make a way, where there seems to be no way

For my case, it was 1 of the 3 Galaxy Rasboras I had in a 25cm shrimp tank (no filter, no additional fertilisation, GEX soil, 30% water change 1-2 weekly, strong lights)

I used to have a lot of wild betta. They will try their hardest to jump out of the tiniest hole when possible and always end up dead. One even jumped out of a closed tank by opening the lid. Amazing.
Cheers,
I have dwarf cichlids in my tanks! Do you?

fish jumping out of the water (unless they are not jumpers in the first place) spell trouble. I dosed my 4ft with twice the recommended dose and this morning, I found my T. espei on the floor.
I also kept my A. gibbiceps in a floating betta tank and place a light diffusers on it incase it decides to jump back into the main tank. A few days later, he got smarter, each time I lift the cover up to feed him, he automatically jump out. The great escape![]()

after that great escape, i place a net on the side and watch him jump into the net and pop he is back into the tank.![]()

Whatever the reasons, I got its housemates to admit that they are guilty and formally appologise.(Sorry really bored at home.)
(letters were formed by Seed Shrimp (Ostracoda), the bugs forming the punctuations were rounder but I am not sure what those were)
Some fishes like bettas, channas, bichirs, arowanas and many more are born to be jumping/escape artists. There is a large percentage that they will jump out of the tank for no reason if left uncovered.
When aquatic faunas are not acclimatised properly or when water parameters fluctuate drastically(i.e pH crash, ammonia spike etc), they will also jump out of the tank once they cannot take it anymore.
Aggression - fish get chased after by other tankmates frantically will dart around, trying to escape attacks and may accidentally jump out of the tank too...Or even intendedly. I lost a Nanochromis parilus female recently, and I suspect that it could be this reason.![]()
As for "food", I do see my wild bettas reacting to ants passing by, but never seen any of them jump with attempt. Probably they are regularly fed? But I can imagine if I didn't cover the tank well and neglect feeding for weeks, they will surely jump out of the tank to feast on the ants.
Of course, there are phenomemons that I've heard such as arowana jumped or died dubiously, to block "unfortunate" event for the owner.

Fish jump out of water primarily to escape from predators and to catch food... Thus, it is likely that your fish is disturbed by either their tankmates or sudden movements outside the tank and they freaked out and jumped to 'escape'...
