I add a little after every water change and realised that my pH (from using ADA soil) increased from about 6.2 to about 8.2.

cannot seem to get the pH down through peat moss, so what should i do about it?

Add CO2 to lower pH? or add more peat moss to lower pH? or not to add anymore Seachem Equilibrium anymore?

I understand that using this Equilibrium helps with the shrimps moulting by increasing necessary nutrients, somewhat similar to Mosura Mineral Plus.

I have experiences with seachem equilibrium and its ups the nitrate and PH levels in the water. I have tried bringing it down with co2 but the effect during water changes is quite minimum since you are adding 50% PH 6.5 -> to PH 7.4 water, so it will balance out.

I had some shrimps previously which couldnt take this changes and died. You might want to add maybe 1/32 of the recommended dosage.
