Getting into Fishy Business
It has got to do with your tank water parameters, notably ph difference between the bag of water you got from lfs and your tankwater. Proper acclamatising when introducing shrimps into your tank is required.

Its probably got to do a lot with your water. Yamatos are known to climb or jump out of the water when water conditions are bad.
Do you have fish chasing after them? You might want to include more hiding places for them if your tank is lacking them.
I have 3 yamatos in a shrimp only tank with lots of moss and hornwort and water filled to the brim of the tank. And they're not jumping out or anything.
Mixed water in the tank to the bag for an hour before releasing into the tank. Anyway the tank have driftwoods and plants so no lack of hiding place. But they do like to hang near the filter outlet near the surface.
