My Yamato eat just about anything. They didn't seem to have any issue with some canned (sodium free) and then boiled green beans. You could probably even experiment for color; figure out which vegetables hold the pigment required to encourage a desired color in your shrimp.

Vegetables sold here may be loaded with pesticides and chemical fertilisers. If you want to try then organically grown vegetables is the way to go

Many of us are adding chemicals to our aquarium that already make our fish unfit for human consumption. Flourish Excel is some nasty stuff that way. Ferts dosed from most brands or DIY look a lot like what farmers use.

Pesticides might be a problem with fresh foods if the regulations are loose. Malathion would probably do some interesting stuff to shrimp. Peeling the outside off/only feeding the inner parts could get around the issue. I've never had a problem feeding non-organic unpeeled, rinsed foods to any of my fish.

yeah...my office cherry shrimps eat cooked carrot cubes.

It is also cleaner to the water. I dont get planaria worms when I only feed carrots.

Re: vegetable and carrots for shrimps??

Unless you're boiling the carrot, it's probably too hard. The bananas contain phospholypids (fat) and some other nutrients that aren't favorites. Try starting with things that simulate their natural surroundings if you're having trouble. Boiled green leafy vegetables are a good start, though they can polute the water. As an alternative, boiled zucchini might work well.
