you can use a saw to cut the shell to size.
sun dry the meat until it has shrunk significantly. then pry the meat out.
btw, are you having a 'green' or 'brown' husk coconut?
I have a coconut and wanted to keep the coconut husk in 80% condition, mean cut a small portion form one end.
1. What it the best way to remove the coconut meat?
2. Do I need to polish clean the husk surface before attache any moss or plant to it's surface?

if you worry, you can soak the coconut shell in water for a few days.
scrub the surfaces then you should be good to go.

Thanks for the idea and advise.
Soak it in hot boiling water, it will remove the oil from the inner shell where the meat is attached.
