I don't think it's so simple to tell whether a shipment is wildcaught or not. Many factors differ, and it's very possible for a dishonest or unwitting merchant to sell captive breds as wildcaughts.
Honestly, I think you can never be 100% sure. You have to rely on factors such as reliability of merchant, reliability of merchant's source (if he's willing to reveal), condition of fish when the shipment first arrives, etc. There are many factors by which you can eventually arrive at your conclusion, but I think even an expert would be hardpressed to be 100% certain.
In terms of colours, it really depends. Conditioned wildcaughts can rival the colouration of farmbreds easily, especially if the farmbred ones are inbred into deformity/weakness. Of course, stock from sources such as Wilhelm will easily be distinguishable by colour alone.
