I have seen rather red males. I did read somewhere that those very very red males are sterile, but I am not too sure of that. Female on the whole is generally redder.
However, when a shrimp gets older, and is not growing anymore, stops molting, they can develop very red shell. That doesn't mean they are healthy though. I have seen some old cherry shrimps passed off as sakuras/fire red.
