Yes indeed i'm using rice too. But I do add some sugar just to 'kick start' the system faster. My 1 little bottle had been 3+ weeks already.
I believe one don't need to follow the 'recipe' tightly as long as u have good flow of CO2 and don't need to change your bottle too often, you do have a good recipe!
As mention in powerpoint, the yeast need protien.

Beside that, upon regenerate ....they say using back old yeast in bottle below and added new yeast help improve CO2 regenerate faster, is it true?
CAn try 5 liter mineral water bottle instead of 1.5 liter bottle !

should be cooked rice. home-brewed rice wine is made from glutinous rice and yeast.
for a start, you can try using a cup of rice.
then adjust the rice quantity.
