Can try ocean free zero ammonia, comes in solid state. Looks like carbon but oceanfree says it's not and boast that it can reduce ammonia significantly

I used to have that problem.
I now used Bacter Max, product from CRS Haven, which helps to support bacteria that breaks down excessive toxic ammonia and nitrite.
There maybe other similar product like that in other shops.... you may consider this method.
How much does it cost? And is it shrimp safe?

You have a bacteria population crash. Just do water change, add bacteria into your water and cross your finger. Has there a been a strong fluctuation in water temp? Seems to be the case for me when it happens.

Too much WC will be a one way ticket to heaven for your shrimps.
Your shrimps are very stressful now, that's why they are trying to climb out from your tank. Itchy hand and finger always resulted in casualty.
Do minor WC once per week, not to worry too much on ammonia issue.

Now you mention charcoal, I remembered removing the packet of charcoal from the tank when editing it. FML.
I just got that oceanfree ammonia reduction thingy. Hopefully it will work.
