anyone knows the mechanism in which co2 test kits work (as opposed to pH test kits).

do they tell co2 levels irregardless of carbonate and phosphate buffering and presence of other acids (eg; peat/tannic/humic)

Most CO2 test kits are titration tests with end point at about pH 8.3. The results will be affected by present of buffers. Not very accurate.

Buy the ADA glass CO2 indicator. It costs around $60 plus at Nature Aquarium. It is a show piece and gives quite accurate indication of CO2 in your tank.
