I am using echinodorus opacus verde, rataj, sp Satan, Barclaya Longifolia & crypt in my shrimp tanks... Tanks are without co2, no fertilizer regime & highly oxygenated..
All seems fine & plants doing ok..

Also consider fast growing floating plants to soak nitrates. Hornwort/mini lettuce/frogbit/duckweed.

Najas guadalupensis, most varieties of Anubias, Java fern, Bolbitis, Most mosses/fissidens. I've grown Süßwassertang, riccia without CO2.
i still think that, co2 must be applied, even though very little......
My shrimp tank, even full aeration, co2 is applied too
Jaymes, that's why some refer injecting co2 as enrichment haha.
You basically like plants more then shrimps
Actually aeration from pump will have both co2 and o2 mixed since it is from a non pure source.
I will vouch in for frogbits. No matter how much they grow. Easier to control. Duckweed (the smaller one) is very much a pest to me. Keep staging a return. Stick all over the tank and my arms. ARGH!!!

The best low maintenance plant will be java ferns and anubias.
