Anyone keeping Hygrophila Pinnatifida noticed the leaves changes position during lights on and off? I have observed it for the past week and it happened daily.

Now I'm wondering if this happens to other type of plants.
Yeah, thats a characteristic of the plant.
Other stem plants like rotala also do the same, they close up their leaves during night time... i've noticed that rotala wallichi can even change the direction of their entire stems to face towards light sources within the space of 10-15 minutes.
The amazing thing is they adjust the position according to the light period. They starts to "open" up about 2 hours ahead of the light period and start to slowly close up about an hour or so. It makes me wonder if they feel pain when we trim them...
When I used to have Myriophyllum matogrossense growing in my tank, I noticed the leaves close up during lights off period as well. Didn't think much of it as I'm sure other aquatic plants of different species do something of a similar nature.
